Abstract

Zbog konstantnog porasta i povećanja potreba za prehrambenim proizvodima te zbog razvoja i specijalizacije pojedinih područja za određenu hranu, transport prehrambenih proizvoda nužan je za stabilnost i zadovoljavanje potreba svjetske potražnje za hranom. Smrznuta hrana, iako često prikazana kao manje kvalitetna, na globalnoj razini postaje sve traženija i počinje igrati sve važniju ulogu. Zbog užurbanosti današnjeg života te zbog manjka slobodnog vremena, smrznuti prehrambeni proizvodi jedno su od najpraktičnijih rješenja modernog čovjeka za pripremu hrane u kratkom vremenu. Velika prepreka korištenja smrznutih prehrambenih proizvoda je složenost organizacije hladnog lanca i uvjeta u kojima takva roba treba biti skladištena. Tehnički i biološki kvarovi smrznute hrane jako su česti te predstavljaju najveću prepreku transporta ovakve vrste hrane. Osim što transport mora omogućiti da će hrana biti dostavljena na krajnju lokaciju o prvobitnom stanju što se tiče kvalitete, također mora biti i pravovremen kako hrana ne bi provela previše vremena u prijevozu. Stoga je da bi hrana došla na odredište u adekvatnom stanju i vremenu potrebno izabrati odgovarajući oblik transporta koji najviše odgovara takvoj vrsti hrane. Svaka roba zahtjeva specifične uvjete kod skladištenja što znači da se različite robe u pravilu ne mogu prevoziti zajedno, samo u situacijama gdje jednaki uvjeti (npr. temperatura i vlaga) odgovaraju različitim vrstama prehrambenih proizvoda. Upravo zbog brojnih specifičnosti vezanih uz transport ovakve vrste robe, cilj ovog rada je identificirati prednosti i mane različitih oblika transporta kako bi se utvrdilo za što su pojedini oblici prijevoza primjereni.

Abstract (english)

Due to the constant growth and increase of the need for food products as well as development and specialization of certain areas for specific type of food, transportation of food products is necessary for the stability and meeting the needs of the world demand for food. Frozen food, although often portrayed as lower quality food, is becoming more and more sought after on a global level and is starting to take on a more important role. Due to the fast-paced lifestyle and the lack of free time, frozen food products are one of the most practical solutions of modern people to prepare food in short time. A major obstacle to the use of frozen food products is the complex organization of the cold chain and the conditions in which such goods should be stored. Technical and biological spoilage of frozen food is very common and represents the biggest obstacle to the transport of this type of food. In addition to the fact that the transport must ensure that this food will be delivered to the final destination in its original state in terms of quality, the delivery must also be timely so that the food does not spend too much time in transport. In order for the food to arrive at its destination in adequate condition and time, it is necessary to choose the appropriate form of transport for this type of food. Each commodity requires specific storage conditions, which means that different goods cannot, as a rule, be transported together, only in situations where the same conditions (e.g. temperature and humidity) correspond to different types of food products. Precisely because of the many specifics related to the transport of this type of goods, the aim of this paper is to highlight the advantages and disadvantages of different forms of transport and to show what certain forms of transport are suitable for.
