Abstract

Ovaj diplomski rad istražuje kompleksnost i specifičnosti urbane logistike u prehrambenoj industriji. Fokus je na identifikaciji izazova i rizika koji su povezani s distribucijom prehrambenih proizvoda u urbanim sredinama. U radu se pruža teorijski okvir za razumijevanje urbane logistike i njene ključne komponente. Analiziraju se konkretni logistički elementi unutar prehrambene industrije i daju se primjeri poduzeća koja su uspješno implementirala strategije urbane logistike. Poseban naglasak stavljen je na identifikaciju rizika, uključujući one u svezi s prijevozom, skladištenjem i sigurnošću proizvoda. Ovaj rad pruža dublje razumijevanje izazova s kojima se susreće prehrambena industrija u urbanim okruženjima, i nudi potencijalne smjernice za unapređenje logističkih procesa. Kao posljedica unaprijeđenih logističkih procesa, raste sigurnost hrane, smanjuje se cijena hrane, kao i količina otpada.

Abstract (english)

This master's thesis explores the complexity and specificities of urban logistics in the food industry. The focus is on identifying challenges and risks associated with the distribution of food products in urban environments. The paper provides a theoretical framework for understanding urban logistics and its key components. It analyzes specific logistics elements within the food industry and offers examples of companies that have successfully implemented urban logistics strategies. Special emphasis is placed on risk identification, including those related to transportation, storage, and product safety. This thesis provides a deeper understanding of the challenges faced by the food industry in urban settings and offers potential guidelines for improving logistics processes. As a result of enhanced logistics processes, food safety increases, food costs decrease, and food waste is reduced.
