Abstract

Upravljanje lancem opskrbeu prehrambenoj industriji uključuje aktivnosti ili radnje od proizvodnje, distribucije i potrošnje za učinkovito upravljanje pitanjima kvalitete i sigurnosti hrane. Uloga nabave postala je više strateška, što je dovelo do promjena u upravljuanju nabavom. Uloga strategije nabave također se povećala, a danas je neophodno da tvrtke imaju strategije nabave kako bi definirale svoje djelovanje u tom sustavu. Strategija nabave sastoji se od nekoliko elemenata a najvažniji su odnosi s dobavljačima, koji su s vrijednosne perspektive jedan od glavnih elemenata strategije nabave. Elementi i uloga strategije nabave analizirani su na primjeru prehrambene industrije, a predstavljeni na praktičnom primjeru tvrtke Franck d.d.

Abstract (english)

Supply chain management in the food industry involves activities or actions from production, distribution and consumption to effectively manage food quality and safety issues. The role of procurement has become more strategic, leading to changes in procurement management. The role of procurement strategy has also increased, and today it is necessary for companies to have procurement strategies to define their operations in that system. The procurement strategy consists of several elements, the most important being the relationships with suppliers, which are one of the main elements of the procurement strategy from a value perspective. The elements and role of the procurement strategy are analyzed in the example of the food industry, and presented in the practical example of Franck d.d.
