Abstract

Restorani brze usluge predstavljaju specifičnu vrstu restorana koji svakodnevno privlače brojne potrošače širom svijeta. Posljednje vrijeme brojni restorani brze usluge prolaze kroz dinamične i česte promjene uzrokovane pojavom nove tehnologije.
Digitalizacija poslovanja je neophodna, a u konačnici dovodi do optimizacije poslovnih procesa i povećanja profitabilnosti. Također, digitalna tehnologija pomaže smanjiti ili eliminirati zadatke koji se ponavljaju te pojedincu kao zaposleniku restorana brze usluge znatno olakšava cjelokupni rad. Shodno tome dolazi do efikasnijeg timskog rada i isporuke još brže i kvalitetnije usluge.
U prvom dijelu radu objasnit će se povijesni razvoj restorana brze usluge, uloga i odgovornost operacijskog menadžmenta te važnost odabira i implementacije digitalne tehnologije u operativnom poslovanju restorana brze usluge. Dalje, fokusirat će se na sustave koji omogućuju kvalitetno upravljanje poslovnim procesima te dovode do boljeg operativnog predviđanja, upravljanja zalihama i smanjivanja repova čekanja. Između ostaloga, prikazat će se glavne determinante uspjeha korporacije McDonald's - najpoznatijeg predvodnika u segmentu poslovanja restorana brze usluge.
U drugom dijelu rada provest će se empirijsko istraživanje o primjeni digitalne tehnologije na timski rad djelatnika restorana brze usluge X u gradu Zagrebu. Cilj empirijskog istraživanja je uvidjeti na koji način digitalna tehnologija unaprjeđuje radne aktivnosti, timski rad i poslovne rezultate.

Abstract (english)

Quick - service restaurants are a specific type of restaurant that attracts many consumers around the world on a daily basis. Lately, many fast - service restaurants are going through dynamic and frequent changes caused by the emergence of new technology.
Digitalization of business is necessary, and ultimately leads to optimization of business processes and increase profitability. Also, digital technology helps to reduce or eliminate repetitive tasks and greatly facilitates the overall work of an individual as an employee of a fast - service restaurant. As a result, there is more efficient teamwork and delivery of even faster and better service.
The first part of the paper will explain the historical development of fast - service restaurants, the role and responsibility of operational management and the importance of selection and implementation of digital technology in the operational business of fast – service restaurants. Further, it will focus on systems that enable quality business process management and lead to better operational forecasting, inventory management and reduced queues. Among other things, the main determinants of the success of McDonald's Corporation - the most famous leader in the segment of fast - service restaurant business - will be presented.
In the second part of the paper, an empirical research will be conducted on the application of digital technology to the teamwork of employees of the fast – service restaurant X in the city of Zagreb. The goal of empirical research is to see how digital technology improves work activities, teamwork, and business results
