Abstract

Središte diskusije ovog diplomskog rada jesu odrednice primjene integriranih sustava upravljanja kvalitetom u prehrambenoj industriji na primjeru poduzeća Leda d.o.o. Čitluk. Nakon što su pobliže pojašnjeni osnovni pojmovi potrebni za lakše razumijevanje ostatka rada, kvaliteta i upravljanje kvalitetom, navedene su najpoznatije svjetske vrste integriranih sustava upravljanja kvalitetom u prehrambenoj industriji. Glavni dio rada se odnosi na studiju slučaja koja se temelji na provedenom intervjuu s direktoricom kontrole kvalitete Leda d.o.o. Čitluk. Svrha intervjua je da se teorija potkrijepi praksom, te da se na stvarnom poduzeću prikaže primjena integriranih sustava upravljanja kvalitetom, prepreke pri njihovoj implementaciji kao i koristi od nje. Kroz rad se nastoji prikazati kako je teoretske spoznaje o primjeni integriranih sustava upravljanja kvalitetom u prehrambenoj industriji poprilično teško provesti u praksi primarno zbog prirode prehrambenih proizvoda, visokih troškova primjene kao i širokog spektra različitih uvjeta poslovanja koji su daleko od idealnih.

Abstract (english)

The focus of the discussion of this graduation thesis is the determinants of the application of integrated quality management systems in the food industry on the example of the company Ledo d.o.o.Čitluk. After the explanation of basic concepts necessary for an easier understanding of the rest of the thesis, quality and quality management, the world's most famous types of integrated quality management systems in the food industry are listed. The main part of the paper refers to a case study based on an interview with the quality control director of Ledo d.o.o.Čitluk. The purpose of the interview is to support the theory with practice, and to demonstrate the application of integrated quality management systems, obstacles to their implementation, and benefits from it in a real company. The paper tries to show how theoretical knowledge about the application of integrated quality management systems in the food industry is quite difficult to put into practice primarily due to the nature of food products, high application costs, as well as a wide range of different business conditions that are far from ideal.
